Turkey Po’ Boy
Recipe Yield: 4 Servings

Fresh Foster Farms Turkey Breast carved thick onto a toasted French bread roll dressed with shredded iceberg lettuce, chopped tomato and silvered yellow onions. Dressed with a special Chipotle Chili Mayonnaise sauce.
Ingredients:
 
12  Oz.  Foster Farms Turkey Breast
4  Each  French bread sandwich rolls
2  Cups  Tomato, chopped
1  Cup  Yellow onion, thinly sliced
2  Cups  Iceberg lettuce, shredded
3  Tbsp.  * Chipotle Chili Mayonnaise
3  Cups  Mayonnaise
3  Tbsp.  Chipotle in Adobo, pureed and prepared
1 1/2  Tsp.  Oregano, dry
1  Tbsp.  Cumin, ground
Instructions:
  • Preheat oven to 350
  • Warm bread for 5 minutes. Split rolls in half and place 1 Tbsp. mayonnaise on each side.
  • Add to each sandwich, 3 oz. turkey, ¼ cup tomato, 1/8 cup onions and ¼ cup lettuce.
  • Sprinkle with sea salt and pepper and top with remaining halves.
  • Serve either whole or sliced in half on a diagonal.
  • ** Serving suggestion: Serve sandwich on top of hot homemade potato chips in a basket.
  • * Chipotle Chili Mayonnaise
  • In a bowl, mix all ingredients together well. Cover, label and date, and hold remaining under refrigeration until needed.
