Aunt Mary's Apple Sauce Muffins
Recipe Yield: 4 Dozen

In October, after a good hard frost, Grandma would load the children up with baskets and buckets and send them out into the cold to pick apples. The rest of the day was filled with the sounds of peeling, chopping, and children laughing.
Ingredients:
 
2  cups  Shortening
1  cup  Sugar
3  cups  Corn Syrup
8  to 9   Eggs
4  cups  Applesauce
9  cups  Flour, H&R Bleached
2  Tbsp.  Baking Powder
2  tsp.  Salt
3  cups  Nuts, chopped
1  Tbsp.  Cinnamon or Nutmeg (OPTIONAL)
 
Instructions:
  • Add shortening, sugar, corn syrup and eggs and mix well.
  • Add apple sauce to mixture.
  • Add flour, baking powder, salt and chopped nuts and mix only enough to incorporate.
  • Portion into muffin cups with No. 16 scoop.
  • Bake at 350 degrees F for 20-25 minutes.
