Fire Roasted Turkey Bowl
Recipe Yield: 4 Servings

A large bowl filled with cilantro scented rice, grilled peppers, onions, corn, black beans, prepared salsa, grilled slices of turkey, garnished with shredded cheddar, jack cheese and a chipotle flavored cream sauce with fresh chopped cilantro.
1  Lb. 6 Oz.  Foster Farms Turkey Breast, julienne strips
3  Cups  White rice
2  Tsp.  Garlic salt
1  Cup  Fresh cilantro, chopped
1  Large  Red bell pepper
1  Large  Green bell pepper
1  Whole  Sweet onion
4  Small Ears  Sweet corn, cooked
2  Cups  Black beans, canned
1/4  Tsp.  Liquid smoke seasoning
1  Cup  Prepared fruit salsa
1  Cup  Shredded jack and cheddar cheese blend
1  Whole  Green onion, chopped
1  Cup  *Chipotle Flavored Cream Sauce
1/2  Cup  Whipped cream cheese
1/2  Cup  Milk
2  Tbsp.  Bottled chipotle hot sauce
  • Cook rice in 5 cups water. Add garlic salt to water while cooking.
  • Toss cooked rice with ¾ cup chopped cilantro and keep warm.
  • Heat a non-stick pan to high heat.
  • Thickly slice peppers and sweet onions.
  • Add peppers, sweet onion, black beans, sweet corn and liquid smoke seasoning to hot pan and cook until vegetables are lightly blackened and softened, keep warm.
  • Heat grill to high heat and grill turkey slices on each side for about two minutes until grill-marked and heated through, repeat with the peppers and sweet onion and keep warm.
  • Combine cilantro rice and warmed black beans in a large bowl.
  • Divide rice mixture between four bowls .
  • Top each bowl of rice with grilled vegetables and grilled turkey.
  • Spoon 2 oz. prepared fruit salsa over each bowl, as well as the chipotle flavored cream sauce and shredded jack and cheddar cheeses.
  • Garnish each bowl with remaining chopped cilantro and green onion and serve.
  • *Chipotle Flavored Cream Sauce
  • Combine all ingredients in a small saucepan and mix until heated through. Yield: About 1 cup sauce
