Turkey Wellington
Recipe Yield: 4 Servings

Delicious Wellingtons stuffed with a colorful mixture of cranberries and wild rice, Brie cheese and Foster Farms Turkey Breast. Bake in the oven until crisp and golden brown.
1 1/4  Lbs.  Foster Farms Turkey Breast, chunk
1  Cup  Wild rice
1  Cup  Dried cranberries
2  Cups  Chicken broth
8  Slices  Brie cheese, thinly sliced
4  Sheets  Puff pastry sheets
1  Large  Egg
1  Cup  Chopped toasted walnuts
  • Pre-heat oven to 400°F.
  • Combine wild rice and cranberries with chicken broth and bring to boil. Cover and simmer until tender; drain any excess broth if necessary. Let cool.
  • Place ¼ cup rice mixture onto each puff pastry sheet. Top with one Brie slice, then one piece of turkey and one more Brie slice.
  • Scramble egg in a small bowl and brush over Wellingtons with a pastry brush.
  • Bake 30 min. or until golden.
