Pecan Pie Bar
Recipe Yield: 64 - 2 x 3-inch servings

Ingredients:
 
   BAR CRUST:
1  box  Gold Medal® ZT White Cake Mix 5 lb (11132)
2  cups  Butter, softened
4  large  Eggs, whole
   BAR FILLING:
3  cups  Corn syrup
1  cup  Brown sugar
1  tbsp + 1 tsp  Vanilla extract
8  large   Eggs, whole
6  cups  Pecans, chopped
 
Instructions:
  • Bar Crust:
  • Place crust ingredients in mixer bowl and mix for 2 minutes on low speed.
  • Press mixture into a paper-lined full sheet pan.
  • Bake: Convection oven - 300 degree F. - 20-25 minutes (rotate pans in convection oven one-half turn (180 degrees) half way through baking.) OR Standard Oven - 350 degree F. - 25-30 minutes.
  • Bake until golden brown. Remove fromoven and flatten the crust to make it even.
  • Bar Filling:
  • Combine all filling ingredients in mixer bowl. Mix on low speed for 1 minute. Do not overmix.
  • Spread evenly over pre-baked crust.
  • Bake: Convection Oven - 300°F - 25-30 minutes (Rotate pan baked in a convection oven one-half turn (180 degrees) half way through baking. Standard Oven - 350°F - 25-30 minutes
  • NOTE: Cool completely, at room temperature, before cutting.
