Fruited Cinnamon Biscuit Crunchies
Recipe Yield: About 88 Biscuit

Features Pillsbury Biscuit Mix or you can substitute any of the other Pillsbury Specialty Biscuit mixes.
Ingredients:
 
4  cups  Sugar, granulated
3  Tbsp.  Cinnamon, ground
4  cups  Water, cold (50 Degrees F.)
1  5 lb. box  Pillsbury Biscuit Mix *
1  cup  Margarine or butter, melted
2  cups  Fruit preserves, strawberry, raspberry, peach or other
 
Instructions:
  • Combine sugar and cinnamon; set aside.
  • Pour water into mixer bowl; add biscuit mix. Mix in low speed using a paddle for 1 minute or mix by hand until combined.
  • Roll dough on floured surface to 1/2" thickness; cut with 2" cutter (about 1 1/4 oz. dough).
  • Dip both sides of biscuits in melted margarine, then coat heavily with cinnamon sugar mixture. Place on paper-lined sheet pans.
  • With thumb, make deep imprint in center of each biscuit; fill with about 1 tsp. preserves.
  • Bake in 450 degrees F. conventional oven (400 Degrees F. Convection oven) about 6 to 10 minutes or just until biscuits are done. Drizzle with powdered sugar glaze, if desired.
  • *To substitute 1 box (5 lb.) Pillsbury Buttermilk Biscuit Mix, increase water to 5 cups. To substitute 1 box (5 lb.) Pillsbury Southern Style Biscuit mix, increase water to 4 1/2 cups. To substitute 1 box (5 lb.) Pillsbury Homestyle Biscuit Mix, substitute 6 cups cold milk for the water.
