Not your typical turkey and mashed potatoes. Baked turkey breasts topped in garlic and cheese mashed potatoes, and then baked once more for a perfect main course!
Ingredients:
2 Lbs.
Foster Farms Turkey Breast
4 Large
Russet potatoes
1 Clove
Minced fresh garlic
1/4 Cup
Chopped fresh chives
1/4 Tsp.
Olive oil
3 1/2 TBSP.
Butter
1 Cup
Shredded cheddar cheese
1/2 Tsp.
Salt
Instructions:
Pre-heat oven to 400°F.
Wash and dice potatoes, leaving skins on.
Bring potatoes to boil and cook until tender, about 15 min.
Sauté minced garlic clove and ¼ cup chives in ¼ tsp. olive oil until fragrant.
Drain cooked potatoes and add 3 ½ Tbsp. butter and garlic mixture as well as ½ tsp. salt and 1 cup shredded cheddar cheese.
Mash with a potato masher until very soft. If potatoes seem dry, add a little whole milk or cream until soft and easy to spread.
Using a piping bag with a large tip or off-set spatula, spread potatoes over turkey breast covering all sides.
Bake in oven for 10- 15 min. or until potatoes are lightly golden and crisp on the edges.
