Chunky Potato-Pepper Soup
Recipe Yield: 

Featuring Quality Farms Diced Potatoes
10  lbs.  Quality Farms Diced Potatoes (77200)
10  cups  Vegetable or Chicken Broth
3  small  Red sweet pepper, chopped
3  small  Yellow sweet pepper, chopped
3  small  Green pepper, chopped
3  small  Onion, chopped
1/2  cup  Margarine or butter
2  cups  All-purpose flour
1  tsp.  Salt
1  tsp.  Pepper
1/2  tsp.  Red pepper, ground
1  gal.  Milk
  • In a medium saucepan, combine Quality Farms Diced Potatoes and vegetable or chicken broth. Bring to a boil; reduce heat. Cover and simmer for 10 minutes or until potatoes are tender. Do no drain.
  • Meanwhile, in a large saucepan, cook the green pepper, red pepper, yellow pepper and onion in hot margarine or butter until tender but not brown.
  • Stir in flour, salt, black pepper and ground red pepper. Add milk all at once. Cook and stir until thickened and bubbly. Cook and stir for 1 minute more. Stir in drained potatoes. Heat thoroughly.
