French Market Turkey
Recipe Yield: 4 Servings
A seasonal blend of herbs and perfectly sautéed eggplant, bell peppers, mushrooms, black olives and garlic spooned over 2 thick slices of pan-seared Foster Farms Turkey topped with shaved Parmesan cheese.

Foster Farms Turkey Breast, thick sliced |
1 Large |
Sweet onion, chopped |
1 Tbsp. |
Olive oil |
2 Cups |
Eggplant, diced |
2 Cups |
Mixed red and green bell peppers, diced |
1 1/2 Cups |
Crimini mushrooms, sliced |
2 Tbsp. |
Fresh thyme, chopped |
2 Tbsp. |
Fresh basil, chopped |
3/4 Cup |
Black olives, chopped |
2 Cloves |
Garlic, minced |
1/2 Cup |
Parmesan cheese, shaved |

Flat bread |

Instructions:
- Pre-heat oven to 350 F.
- On high heat, pan sear turkey slices until lightly browned on each side and place on an ovenproof platter.
- In the same pan add olive oil, onion and eggplant.
- Cook until tender, about 5 min.
- Add bell peppers and cook additional 3 min.
- Add mushrooms, thyme, basil, olives and garlic; cook 1 min.
- Spoon mixture over turkey slices.
- Sprinkle cheese over vegetable/turkey mixture.
- Place platter in oven until cheese begins to melt, about 5 min. let sit 1 min. and serve on one piece of flat bread.
