Pear and Cranberry Coffee Cake
Recipe Yield: 12 Servings

12  Oz.  Cranberries
1  Can  Canned pears, pureed with blender
1  Tbsp.  Butter, melted
1  Cup  Sugar
2  Oz.  Papetti's Better'n Eggs Liquid Eggs #15233
1 1/2  Oz.  Papetti's Easy Eggs Liquid Egg Whites #15153
1  Tbsp.  Canola oil
2 1/4  Cups  Cake flour
1  Tsp.  Baking powder
1  Tsp.  Baking soda
1/2  Tsp.  Salt
1  Cup  Reduced fat sour cream
  • Purée pears and add to melted butter in stainless bowl.
  • Add sugar, eggs, and oil and mix well.
  • Sift flour with baking powder and soda.
  • Add flour alternately with sour cream to bowl and add cranberries. Mix well.
  • Spray 9"x12" pan with non-stick spray, pour in batter and bake at 350°F for 30-40 minutes until firm.
