Crunchy Caramelized Banana Stuffed French Toast
Recipe Yield: 12 servings

   Custard Ingredients:
32  Oz.  M.G. Waldbaum's Easy Eggs® or Papetti's Table Ready™ Liquid Eggs
4  Oz.  Heavy Whipping Cream 36%
2  Oz.  Sugar, super fine
1  Tbsp.  Cinnamon
1/2  Tsp.  Nutmeg, fresh ground
   Filling Ingredients:
24  Oz.  Strawberry Cream Cheese, whipped
12  Each  Bananas, peeled, sliced lengthwise and cut in half
4  Oz.  Brown Sugar
   Coating Ingredients:
16  Oz.  Corn flakes, crushed
24  Pieces  Michael Foods French Toast
 needed  Melted Butter or Alternative
  • In a mixing bowl combine eggs, cream, sugar, cinnamon and nutmeg. Reserve.
  • In a sauté pan, melt the butter and add the sugar. Cook until the sugar is dissolved and bubbling. Add the bananas and cook for 2 minutes. Cool.
  • Spread one side of the French Toast with 2 ounces of the strawberry cream cheese and place 4 slices of the caramelized bananas on top.
  • Top with the second piece of French Toast.
  • Dip the sandwich in the custard and then into the corn flakes.
  • Place on a buttered preheated grill. Grill until golden brown, turn over and repeat.
