Rustic Turkey Quesadillas
Recipe Yield: 4 Servings

Grilled flour tortillas with smoked Gouda cheese, caramelized onions and Foster Farms shredded turkey breast. Goes great with the house Merlot!
4  Oz.  Foster Farms Turkey Breast, shredded
2  Each  Large flour or corn tortillas
2  Cups  Smoked Gouda cheese, shredded
1/2  Cup  *Caramelized onions
   *Caramelized onions
1  Tbsp.  Olive oil
1  Large  Sweet onion, sliced
1  tsp.  Sea salt
1  tsp.  Black pepper
1  Tbsp.  Granulated sugar
  • Heat grill/Heat griddle. Lightly grill each tortilla.
  • Lightly spray griddle with olive oil.
  • Place one tortilla on griddle and top with cheese, onions (reserving 1/8 cup for garnish) and turkey.
  • Top with second tortilla and heat 2 minutes each side.
  • Slice with pizza cutter and plate on large warmed platter.
  • Garnish with remaining onions in center and fresh cracked pepper and serve.
  • * Caramelized onions
  • Heat olive oil in a heavy sauté pan over medium heat and add onions, salt, pepper and sugar.
  • Cook over low heat until lightly browned and very tender. (about 15 minutes)
