Pasta Salad with Fruit & Citrus Vinaigrette
Recipe Yield: 7- 8 lbs

Ingredients:
 
2  Cups  Extra Virgin Olive Oil
1  Cup  Freshly squeezed orange juice
2  Cups  Fresh blueberries
2  Cups  Mandarin oranges, canned, drained
3  Cups  Baby spinach (loosely packed)
3/4  Cup  Pine nuts, toasted
2  Tsp.  Salt
1 1/2  Tbsp.  Black pepper
5  Lbs.  Pasta, thawed
 
Instructions:
  • Gently toss all ingredients.
