Pesto Turkey Sandwich
Recipe Yield: Serves 1

Thinly sliced Foster Farms mounded high on Foccacia bread, slathered generously with pesto mayonnaise and topped with sprouts, sun dried tomatoes, sliced fresh tomatoes and Swiss cheese. Can be served either hot or cold.
Ingredients:
 
4  Oz.  Foster Farms Fully Cooked Turkey Breast
1  Oz.  Mayonnaise
1  Oz.  Pesto, prepared
6  Oz.  Focaccia Bread, 4"x5", split, toasted
1  Oz.  Sun dried Tomatoes, packed in oil, julienne
1  Oz.  Tomato, fresh, sliced
1 1/2  Oz.  Swiss cheese, sliced
1  Oz.  Alfalfa sprouts
Instructions:
  • Mix mayonnaise and pesto in a bowl.
  • Spread 1 oz. of mayonnaise mixture on the crown and heel portion of the Focaccia bread.
  • Spread sun-dried tomatoes over the heel portion of the bread, followed by the sliced fresh tomatoes.
  • Top tomatoes with Swiss cheese slices. Mound Foster Farms Oven Roasted Turkey slices onto Swiss cheese.
  • Top turkey with sprouts and cover with crown portion of Focaccia.
  • Place onto a serving plate and serve.
