Athenian Salad
Recipe Yield: 10 Portions

Fresh romaine lettuce, spring greens, chicken breast strips, tomatoes, zucchini and red onions tossed in Hidden Valley Golden Italian Dressing and topped with Kalamata Olives and Feta Cheese.
20  oz.  Hidden Valley Golden Italian Dressing
20  oz.  Prepared chicken breast, cut into strips
10  oz.  Chopped romaine
10  oz.  Spring Greens Mix
10  oz.  Cherry tomatoes, cut in half
8  oz.  Zucchini, sliced
8  oz.  Red onions, sliced thinly
5  oz.  Kalamata olives
5  oz.  Feta cheese
  • Prepared chicken breast as preferred; keep warm until ready for service
  • Plate romaine and spring greens
  • Top with zucchini, red onions, cherry tomatoes, and chicken
  • Drizzle with Hidden Valley Golden Italian dressing
  • Garnish with olives and cheese
