Sesame Soba Noodle and Turkey Salad
Recipe Yield: Serves 4

Tender soba noodles dressed with a ginger peanut vinaigrette and topped with julienne carrots, tangy radish, crushed red pepper and thinly sliced soy glazed Foster Farms turkey breast. Garnished with toasted black and white sesame seeds.
Ingredients:
 
8  Oz.  *Soy Glazed Turkey Strips
15  Oz.  Soba noodles, cooked and cooled (tossed in 2 tsp. sesame oil to prevent sticking)
2  Cups  Carrots, julienne cut
1  Whole  English cucumber, julienne cut
1  Tbsp.  Red pepper flakes, crushed
1/4  Cup  Green onion, chopped
1  Tsp.  Black sesame seeds, toasted
1  Tsp.  White sesame seeds, toasted
1  Cup  * Ginger Peanut Vinaigrette
1/2  Cup  Ginger dressing, prepared
1/4  Cup  Peanut butter
1/4  Cup  Water
   * Soy Glazed Turkey Strips
8  Oz.  Foster Farms Turkey Breast, julienne cut
2/15  Cup  Soy sauce
2/15  Cup  Honey or maple syrup
Instructions:
  • Gently toss soba noodles with carrots, cucumber, red pepper flakes and green onion until thoroughly combined.
  • Evenly divide noodle mixture between four chilled square bowls.
  • Lay 2 oz. soy glazed turkey strips over each bowl and drizzle ¼ cup dressing over each.
  • Garnish with toasted sesame seeds and additional green onions if desired.
  • * Soy Glazed Turkey Strips
  • Combine all ingredients in a sauce pan and sauté until turkey is fully coated and sauce caramelizes. Let cool under refrigeration.
  • * * Ginger Peanut Dressing
  • Combine all ingredients with a whisk until smooth
