Turkey and Vegetable Tempura
Recipe Yield: 4 Servings

Medley of fresh vegetables and fresh Foster Farms Turkey Breast quick fried for a delicious crunchy appetizer. Served with a tangy sauce for dipping.
8  Oz.  Foster Farms Turkey Breast, large chunks
2  Cups  Canola oil
1 1/4  Cups  Boxed tempura batter mix
2  Cups  Panko (Japanese bread crumbs)
2  Large  Eggs
1/2  Cup  Sweet Onion, sliced
1/2  Cup  Zucchini, sliced
1/2  Cup  Eggplant, sliced
1 1/2  Cups  Broccoli crown pieces
1  Cup Sliced  Sweet potato, sliced
3/4  Cup  Bottled peanut dressing
3/4  Cup  Rice vinegar
  • Bring 16 oz. oil to fry temperature over medium to high heat in a high-sided pan (small bubbles appear, but do not boil).
  • Follow Tempura mix directions according to package.
  • Add Panko and eggs to tempura batter (batter should be fairly thick).
  • Dip each turkey piece and vegetable into batter.
  • Coat well and place in heated oil to fry until golden on all sides.
  • Place onto paper towel for 1 minute before serving.
  • Combine dressing with vinegar, whisking until combined.
  • Serve with Tempura.
