Greek Town Turkey Plate
Recipe Yield: 

Ingredients:
 
16  oz.  Foster Farms Turkey, sliced 1/2 in.
4  each  Pita rounds
1/4  cup  Extra virgin olive oil
8  oz.  Feta cheese, crumbled
8  oz.  Hummus, prepared
2  cups  Romaine lettuce, shredded
1  cup  Kalamata olives, pitted
8  oz.  Red and green bell peppers, striped, mixed and marinated
   Salt and pepper to taste
Instructions:
  • Preheat oven to 350 F.
  • Cut each pita round into 4 triangles, brush generously with extra virgin olive oil, and season with salt and pepper.
  • Place pita triangles on a sheet pan and bake until golden brown. Keep warm and set aside for later use.
  • Shingle about 4 slices of Foster Farms turkey and top with 2 oz. crumbled feta cheese.
  • Place the plate under the broiler for 3-5 minutes or until the cheese melts and gets bubbly.
  • When assembling the plate, place in one corner 4 oz. of hummus atop a bed of romaine lettuce (about ½ cup). Mix together ¼ cup of Kalamata olives with 4 oz. of the marinated bell peppers and place on the other corner of the plate.
  • Serve the warm pita triangles on the side.
