Turkey and Heirloom Tomato Sandwich
Recipe Yield: Serves 4 Sandwich

Sliced French baguette with a generous spread of Mascarpone cheese, sliced heirloom tomatoes, arugula and slices of roasted Foster Farms Turkey breast.
6  Oz.  Foster Farms Natural Turkey Breast Roast
1  Cup  Sliced shallots
1  Cup  Mascarpone cheese
2  Tbsp.  Vegetable oil
1/2  Tsp.  Kosher salt
1  Tsp.  Red wine vinegar
1  Each  Lemon, juiced
1/2  Cup  Extra virgin olive oil
4  Each  Heirloom tomatoes
2  Cups  Arugula
1  Each  French baguette
  • Preheat oven and roast Turkey according to package instructions.
  • For the Mascarpone spread, heat vegetable oil in a nonstick pan and caramelize shallots.
  • Remove shallots from pan and chill.
  • Place chilled shallots, mascarpone, and salt in a food processor to blend.
  • For the Vinaigrette, place red wine vinegar and lemon juice in a bowl.
  • While whisking slowly add olive oil until completely blended.
  • Slice baguette bread in half and spread mascarpone cheese on top. Slice the heirloom tomatoes and shingle over the mascarpone spread.
  • Mix arugula with the vinaigrette and slice Turkey.
  • Place about 4 slices of Turkey on the bottom half of the bread and place the arugula on top of the Turkey.
  • Place both halves together slice and serve.
