Turkey Tetrazzini
Recipe Yield: 

Ingredients:
 
24  slices  Foster Farms Turkey Breast, carved
3  lbs  Spaghetti, cooked al dente
3/4  cup  Olive oil
24  cups  Button mushroom, sliced
1/3  cup  Garlic, minced
1 1/2  cup  Parsley, minced
12  each  Bay leaves, whole dried
1  Tbsp  Salt
1/2  Tbsp  Black pepper, coarse
2  cups  Butter, melted
1 1/2  cup  Flour
12  cups  Chicken broth
6  cups  Heavy cream
3  cups  White wine, dry
1 1/2  cup  Parmesan cheese, grated
Instructions:
  • Arrange spaghetti into sheet pan.
  • Heat oil and add mushrooms, garlic, parsley, bay leaves, salt and pepper. Cook 3 to 4 minutes, discard bay leaves, and arrange mixture over spaghetti. Shingle turkey over spaghetti.
  • Combine butter and flour in a saucepan over medium heat and stir until smooth. Gradually stir broth into butter/flour mixture.
  • Bring to a boil while stirring. Reduce heat and simmer 3 to 4 minutes until thickened. Remove from heat.
  • Stir cream and wine into broth mixture and pour over turkey. Sprinkle cheese over turkey.
  • Cover and bake in oven for 400 F for 60 minutes or until bubbly.
  • Portion onto 4 plates to serve.
