Bistro Turkey Dijon Grilled Cheese
Recipe Yield: 

Foster Farms Turkey Breast, melted Gruyere cheese, caramelized onions, with dark rye bread, and Dijon mustard. Served with a side of coleslaw.
24  Slices  Foster Farms Turkey Breast (4oz. per sandwich)
24  Slices  Dark Rye Bread
   Butter (As Needed)
24  Slices  Gruyere Cheese
1/4  Cups  Dijon Mustard
4  each  Large yellow onions (sliced thinly)
3  Tbsp.  Oil
  • In a large sauté pan, heat the oil. Add the onions and cook for about 35 minutes until very soft, and brown in color. Watch the pan carefully, adjusting the heat as necessary. Deglaze the pan as with water as needed as the sugars in the onions begin to develop a fond in the pan.
  • For the sandwiches Butter the bread slices on one side. On the sides opposite of the butter, add 1tsp. of Dijon mustard on one piece, and 2 Tbsp. of the caramelized onions on the other. Then layer one slice of gruyere, the turkey, and one more slice of gruyere. Place the top slice of bread on the turkey and cheese.
  • On a warm griddle, sauté, pan or panini press, add the sandwiches, and cook until the bread is crisp and the cheese is melted, about 5 minutes, flipping as necessary.
  • Remove the sandwiches, and cut in half diagonally. Serve with a side of coleslaw.
