Hungarian Goulash
Recipe Yield: 8 lb. 8 oz.

A Hearty Hungarian Goulash featuring Minor's® Beef Base
1/4  cup  Vegetable oil
4 1/2  lbs.  Beef, lean, cooked, large diced cubes
1  lb.  Onions, medium diced
2  Oz.  All-purpose Flour
2  Tbsp.  Paprika, mild
1  qt.  Water
15 1/2  oz.  Tomatoes, canned, drained, diced
4  oz.  Tomato puree
2 1/2  Tbsp.  Minor's® Beef Base 6x1 lb.
2  lbs.  Potatoes, medium diced
  • In an stock pot, heat oil.
  • Add beef and onions; stew, stirring occaionally, until juice from beef is completely reduced and a light glaze is formed. approximately 12-15 minutes.
  • Blend in flour and paprika. Cook for 2-3 minutes, stirring constantly.
  • Add water, Beef Base, tomatoes and tomato puree, stirring constantly.
  • Reduce heat and gently boil, 90 minutes, stirring occasionally.
  • Add potatoes; continue to cook until potatoes are tender, approximately 10 minutes. Add more water of too much is evaporated.
