Garlic Beef with Broccoli (Marinated)
Recipe Yield: 28 Servings (16 lbs.)

A Scallion, Beef & Broccoli Garlic Stir-Fry
3  lbs. 10 oz.  Beef topside, well trimmed, cut 1/4" thick x 1/2" wide x 1 1/2-2" long
2/3  Cup  Basic oriental marinade (see recipe)
5 1/3  oz.   Peanut oil
1 1/2  Tbsp.  Garlic, minced
1  lb. 3 oz.  Spanish onions, large diced
1  lb. 3 oz.  Scallion, medium bias cut
5  lbs. 6oz.  Broccoli florets with stems sliced 1/8"
1 1/2  qts.  Baby sweetcorn, whole, canned, drained
1  Jug  Minor's® Black Bean Garlic RTU Sauce 4x0.5 gal.
  • Advance: Pour marinade over meat, tossing until well coated. Let stand 15-20 minutes; marinade should be absorbed by the meat.
  • Preheat wok or tilt braising pan to 400 degrees F. Add oil and swirl around to coat cooking surface.
  • Add garlic and onions and scallions, stirring until fragrant, about 5-10 seconds.
  • Add beef; stir and toss 1 1/2-2 minutes until beef is browned.
  • Add broccoli; stir and toss 2-3 minutes until tender-crisp.
  • Add baby corn and Chinese Black Beam-Garlic Sauce; stir and toss 1-2 minutes until all ingredients are well coated with sauce and heated through. Serve hot.
