Bayou Shrimp & Scallop Soup
Recipe Yield: 1 gallon

A Shrimp & Scallop loaded Cajun Spiced Soup prepared with Minor's® Shrimp Base
1/2  cup  Salt pork or bacon, small diced
1 1/4  cups  Scallons, sliced thin on bias
1 1/4  cups  Carrots, small diced
4  oz.  Green bell peppers, small diced
2  oz.  Flour, all-purpose
2  qt.  Water, hot
3  cups  Potatoes, peeled, small diced
4  oz.  Minor's® Shrimp Base 6x1 lb.
1  lb.  Shrimp, peeled and cooked
1  lb.  Scallops, raw
2/15  tsp.  Nutmeg, ground
 dash  White pepper, ground
 dash  Asian Chili sauce
  • In a sauce pot, saute salt pork or bacon until crisp. DO NOT DRAIN FAT.
  • Add scallions, carrots and peppers. Saute 2-3 minutes.
  • Blend in flour. Cook 2-3 minutes, stirring constantly.
  • Add water, potatoes and Shrimp Base. Heat to boiling, stirring occasionally. Reduce heat and gently boil until potatoes are tender, approximately 10-12 minutes, stirring occasionally.
  • Add shrimp, scallops, nutmeg, white pepper and red pepper sauce; gently boil 2-3 minutes, stirring occasionally.
